Foodie Friday...Swiss Stuffing Chicken

For this week's Foodie Friday I fixed Swiss Stuffing Chicken, and served some lima beans on the side. I found this recipe a couple of months ago, and it's so easy and so good that it's on a weekly or biweekly rotation at our house. With our weeknight shuttle with the kids, I'm all about easy.


SWISS STUFFING CHICKEN

Boneless chicken breasts
Slices of Swiss cheese
can of cream of chicken soup
1/4 cup white cooking wine
pepper
Pepperidge Farm Herb-seasoned Stuffing Mix
1/2 stick butter or margarine, melted

Preheat oven to 350 degrees. Spray a casserole dish with non-stick cooking spray. Lay raw chicken in prepared dish, then lay cheese slices on top. Mix together cream of chicken soup, wine, and pepper. Pour over chicken and cheese, then top with the stuffing mix. Drizzle melted butter over the top and bake for one hour.

Although the directions don't say to cover it, I always do. The first time I made it, I didn't cover it and the stuffing mix got a little too dry, so now I always make it in my Corning Ware covered casserole dish.

  5. Oh Tammy, I used to make this dish ~ in the 70s & 80s ~ EVERYONE loves it!! It is super for a simple dinner party entree, too.

    I haven't made it in a long, long time but your post is convincing me I should! Thank you for sharing it. xo
